Abstract:
To improve the ability of gamma-aminobutyric acid (GABA) by
Lactobacillus paracasei, the
L paracei M5 with potential probiotic characteristics was optimized in this study.Single Factor experiment, Plackett-Burman experiment and Response Surface experiment were used to optimize production for
L paracei M5 on the basis of Initial medium.The optimal medium composition was determined as follows: the yeast extract 10 g/L, anhydrous sodium acetate 2 g/L, peptone 5 g/L, glucose 10 g/L, L-glutamate sodium 1.4 g/L, vitamin B6 2 mmol/L, calcium chloride 1.5 mmol/L, inoculation amount 4.1%.The yield of GABA synthesized from the optimized medium was 9% higher than that of the original medium.The results provide a basis for improving the GABA production ability of
Lactobacillus paracasei.
