Study on Cellulase Assisted Extraction Process of Leaf Protein from Morus Alba Leaves

  • The aim of this research is to extract leaf protein concentrates(LPC) in Morus Alba leaves by cellulase enzyme. In single-factor experiment, the effect of ratio of solid-liquid, the amount of enzyme and extracting time on the dissolution rate LPC were investigated. The polynomial quadratic equations model was obtained by simulating the response surface analysis theory. At the same time, the optimum condition for the extraction of LPC in Morus Alba leaves assisted by cellulase enzymes is fixed. The amount of enzyme is 4%; the extraction duration is 2 hours; and the solid - liquid ratio is 1: 38(g:mL). In this condition, 49.056 LPC can be dissolved from 5g Morus Alba Leaves.
